Molten Chocolate Lava Cake

Molten chocolate lava cake makes 4 servings
Ingredients
10 oz semi sweet chocolate chips
5 Tbl unsalted butter
1/2 cup fine sugar or 1 cup power sugar
1 tsp vanilla extract
2 eggs
1/3 cup flour
1/4 tsp salt
Optional 1/4 cup liquor (Your choice, Amaretto, Creme de mint or what ever you like)
Melt chocolate chips over double boiler or in microwave ( 1 minute and check)
Add in room temp butter into melted chocolate.
mix 2 eggs and sugar with wisk or hand mixer until smooth. Add in Vanilla, salt and flour.
Don’t over mix after adding in flour, just combine.
Slowly add melted butter and chocolate into eggs. You want to temper the egg, sugar batter so add melted chocolate in small amounts at first so not to cook the eggs.
Butter 4 6 oz ramekins, you can also spay them lightly with PAM baking spray as well.
place on baking sheet in a 375 degree oven and bake to 12-15 minutes.
The edges should be set and the centers should still soft.
Remove from oven, Run a knife around the cake. To server place a plate over the ramekin and turn the cake over using the plate. Carefully un mold cake.
Server warm.
Optional topping, caramel, ice cream, whipped cream, pecans ,mint chips, shaved chocolate, power sugar, fruit toppings.
